One fruit that I am always certain to have in my kitchen is banana. We don’t eat very much of it but we almost always pick some up when we go to the grocer. Instead of throwing them out when they turn black or soft I have created a number of different ways to include them when I am baking. These tasty banana breads and muffins are a definite hit at our home. I recently bought myself some larger sized muffin pans and in my eagerness to try them out I put together this easy banana bread muffin recipe that is just as good and disappears just as quickly as any loaf.

Preparation Directions:

  1. Combine the dry ingredients in the first list (flour, baking powder, baking soda, and nuts) in a large bowl. Cream the butter and sugar in a separate bowl and add the egg.
  2. In yet another bowl mash the bananas and mix in the vanilla.
  3. Add the dry ingredients first to the creamed butter then add the mashed bananas and combine the mixtures thoroughly.
  4. If you would like to use the optional topping mix together the brown sugar, flour and cinnamon in a small bowl. Cut in the butter until the mixture has the appearance of fine breadcrumbs.
  5. Sprinkle the topping of the muffin mixture.
  6. Preheat the oven to 350 F while you prepare your muffin pan by lining with muffin liners.
  7. Add the batter to the pan up to a ¾ height.
  8. Bake for 20-25 minutes or until the muffins are slightly brown.

 

Makes 6 large muffins.
